Introducing Lentils......

  Lentils are a very good source of protein and are relatively quicker to cook than other types of beans. They are also a cheap source of protein.

                                       
     


                                    They are an excellent food choice for those seeking to loose weight or generally maintain a healthy lifestyle.

                            Lentils are rich in dietary fibre....which is good for our digestive system..as it helps prevent constipation.

                              They also help stabilize blood sugar and slowly releasing energy for you to burn thereby keeping you full for longer....

                    Lentils help lower bad cholesterol in the body....

                   RECIPE:

  • 2 cups Red split lentils
  • 1 can low fat coconut milk
  • 1 teaspoon ...Lion brand curry powder (any other brand will do )
  • Half a teaspoon ground Cumin seeds
  • 500mls Chicken stock or Stock cubes
  • Salt to taste
  • 5 medium sized tomatoes
  • Half of a Capiscum ( tatase)
  • 1 scotch Bonnet chilli (rodo).....optional
  • 1 medium sized onion
  • 1 medium sized sweet potato....diced

    Method
  1. Parboil the lentils....drain the water completely and set aside.
  2. Wash and blend together the Tomatoes, capiscum  onion and scotch Bonnet chilli.
  3. Pour the blended sauce in a pot and bring to a boil to reduce the water content.
  4. In a separate pot, pour in a little oil and heat it just slightly. Slice in  some onion and allow to saute....then pour in the boiled blended tomatoes mix. Allow to fry for a while.
  5. Add in the low fat coconut milk and chicken stock or stock cubes.
  6. Then pour in the parboiled lentils.
  7. Season with salt , curry powder and ground cumin seeds. Let it simmer
  8. Add in the diced sweet potatoes and cook till done.
